Hi Friends! We made it to Friday!! This week has felt super long, so here’s some super quick vegan black bean burgers. Ready in 15-20 minutes, these are packed with protein and fresh veggies, perfect for a late summer picnic or just a quick dinner!
There’s something about a burger isn’t there? It just feels indulgent regardless of whether it’s healthy or not! It just so happens that these ones contain only whole, healthy ingredients, so you can eat as many as you want… with no guilt! Not that you should ever feel guilty eating any food #justsaying.
If you guys follow me on Instagram (check out my profile here!) you will know that this week we have decided to be super spontaneous and booked a trip to Iceland! And we leave in 1 week! Literally, this time next week we’ll be on our way. I am SO excited. We did our first road trip type holiday just over a year ago around California and did lots of camping in Yosemite and Death Valley, and I cannot WAIT to explore Iceland.
We’re going to stay a couple of days in Reykjavik, then do an 8 day road trip around the country! I literally cannot wait. It means that this week is totally crazy getting all the blog stuff ready and scheduled, but I’m also pretty stoked about the recipes coming at you this month!
Ok, brain dump over. Back to these burgers. They are hearty and textured, with a hint of sweetness from the red onion and the barbecue sauce. It’s the perfect balance of flavours for your perfect burger. Try it topped with your favourite salad toppings and extra barbecue sauce for good measure!
