Quite a while back, before I became a vegan, I did a series on Lauren Caris Cooks called #breakfastweek. I absolutely LOVED running it, and obviously I adore breakfast food, so I wanted to make you a vegan option of one of my favourite recipes from that week!

Bircher Muesli, a traditionally Swiss breakfast, is basically the original version of overnight oats. Oats are soaked overnight with yoghurt, milk, fruit, nuts and some orange juice, and in the morning you have a delicious, soft breakfast that’s nutritious and great to take on the go.

For me, it’s so important for breakfast to be quick and convenient. Even though my workday revolves around making food, it doesn’t revolve around spending 30 minutes preparing breakfast everyday. I need something that’s ready to be eaten as soon as I’ve rolled into the kitchen and made some coffee. This vegan bircher muesli is perfect. The night before, you just throw everything you need into a bowl and mix. Let it sit in the fridge overnight for the magic to happen and voila, perfect overnight oats!

Having been an avid eater of regular, non vegan bircher muesli for many years, I obviously wasn’t going to settle for a vegan version that didn’t taste EXACTLY as good. This version simply substitutes milk for your favourite plant milk (mine is oat milk), and dairy yoghurt for soy yoghurt.

I’m not a massive fan of eating soy yoghurt plain, but when it’s mixed with all the other flavours it’s the PERFECT texture for bircher muesli. You honestly can’t tell the difference between this version and the original!

The fun part of course, is topping your vegan bircher muesli with ALL the good things you love! In my case, it’s always berries and a few extra seeds. You guys KNOW how much I love my berries! But whatever you like, even if it’s just the plain bircher muesli, it’s going to be amazing! I really hope you like this recipe as much as I do!

Bircher Muesli
  • 1 cups (180g) Whole Rolled Oats
  • 1 Apple grated
  • 1 cup (235ml) Oat Milk or any other plant based milk
  • 1 cup (235ml) Soy Yoghurt
  • 1/4 cup (25g) Raisins
  • 1 tbsp Walnuts chopped
  • 2 tbsp Flaked Almonds
  • 1 tbsp Brown Sugar
  • 1 tbsp Maple Syrup
  • 1 tbsp Fresh Orange Juice
Toppings
  • Fresh Raspberries
  • Chia Seeds
  • Fresh Blueberries
  • Strawberries
  • Coconut
  • Banana
  • Mixed Nuts and Seeds

Instructions
  1. Combine all ingredients for the bircher muesli in a large bowl and mix thoroughly. Cover in cling film and place in the fridge overnight. Store covered in the fridge for up to 3 days.
  2. When ready to serve, top with anything you like, or eat as it is!
Recipe Notes

This recipe is ideal for freezing. Freeze individual portions of the muesli in ziplock bags. Remove from the freezer and transfer to the fridge the night before you want to eat it. In the morning you will have perfectly defrosted muesli!
