Hey guys! Back today with a quick, fun salad recipe for you. Ok, so the salad itself is not a “recipe” (it’s totally customisable to what veggies you want!), but the dressing… this dressing deserves a blog post of its own.

I’ve been on a bit of a miso high recently, I want to put it in EVERYTHING. Turns out, salad dressings are a win.

These mixed vegetable buddha bowls with tahini miso dressing will make you feel good from the inside out!

The creaminess of the tahini mixed with the sharp, saltiness of the miso creates a dressing you’ll just want to pour over everything. It’s perfect on this buddha bowl, which I chose to add some falafel to. This falafel is pretty special in itself, it’s baked so it’s completely oil free, and is kept moist from the addition of sweet potato. However, you can go ahead and add any kind of falafel or protein you like.

So load up this salad with as much of that tahini miso dressing you can fit, and store the rest in the fridge for later!

Vegetable Buddha Bowls with Tahini Miso Dressing

Ingredients

Dressing

  • 3 tbsp Tahini
  • 1 clove garlic
  • 1 tsp Miso Paste
  • 4-6 tbsp Water

Salad

  • Greens
  • 1/2 Cucumber
  • 10 Cherry Tomatoes
  • Sesame Seeds for garnish
  • Mint Leaves for garnish
  • 6-8 pieces Falafel
  • 1/2 cup (85g) Quinoa

Instructions

  • To make the dressing, combine all ingredients in a blender and blend until smooth. You may need to add a bit more water at the end depending on how thick you’d like the dressing to be.
  • Fill your bowl with quinoa, your favourite greens, top with chopped tomatoes and sesame seeds. Throw on some falafel and smother with the tahini miso dressing. Feel free to substitute the vegetables for any kind you love, this is definitely an adaptable recipe!
