Vegetable Buddha Bowls with Tahini Miso Dressing
These mixed vegetable buddha bowls with tahini miso dressing will make you feel good from the inside out!

Ingredients
Dressing

  • 3tbsp


    Tahini

  • 1clove


    garlic

  • 1tsp


    Miso Paste

  • 4-6tbsp


    Water

Salad



  • Greens

  • 1/2


    Cucumber

  • 10


    Cherry Tomatoes



  • Sesame Seedsfor garnish



  • Mint Leavesfor garnish

  • 6-8pieces


    Falafel

  • 1/2cup (85g)


    Quinoa

Instructions
  1. To make the dressing, combine all ingredients in a blender and blend until smooth. You may need to add a bit more water at the end depending on how thick you’d like the dressing to be.

  2. Fill your bowl with quinoa, your favourite greens, top with chopped tomatoes and sesame seeds. Throw on some falafel and smother with the tahini miso dressing. Feel free to substitute the vegetables for any kind you love, this is definitely an adaptable recipe!
