Spring is the perfect time for asparagus. Switzerland goes a bit asparagus crazy this time of year, so let’s take advantage of this fun little vegetable by roasting it up in a simple marinade.

When it comes to roasting vegetables, particularly asparagus, the simpler the better. A quick, two ingredient marinade is all that’s needed to roast this beautiful vegetable into a soft, flavoursome side dish, perfect to accompany all of your summer meals.

Make the most of this beautiful, seasonal asparagus by roasting it in balsamic vinegar and lemon juice!

Simply let it sit in the marinade for 15 minutes while the oven heats up, roast it for another 15 minutes and you’re ready to go.

Roasted Asparagus with Balsamic Vinegar and Lemon

Ingredients

  • 1-2 large handfuls Green Asparagus
  • 3 tbsp Balsamic Vinegar
  • 1 tsp Lemon Juice
  • salt and pepper for seasoning

Instructions

  • Preheat the oven to 180°C.
  • Wash the asparagus and trim off the woody ends. Add into a roasting tray with the lemon juice and balsamic vinegar and let marinate for 15 minutes.
  • Place the roasting dish into the oven for 15 minutes. Once it’s cooked, season with salt and pepper and serve warm.
